For 6/8 people: 500g potatoes, a kilo of fresh unshelled broad (fava) beans, 250g onions, 100g pancetta, 3 tender artichokes, 3 tbsp. olive oil, salt, a lemon for preparing the artichokes only
1. Shell the beans, peel and slice both onions and potatoes, dice the pancetta 2. Prepare the artichokes by removing all tough outer leaves, slicing off the top third of the leaves, halving and removing chokes with a teaspoon, then quartering - rub any sides you cut with half a lemon and place in water acidulated with vinegar or lemon juice to prevent them turning black once cut 3. Cook the onions with the chopped pancetta in the olive oil, and when the onions are pale gold add the beans, artichokes and potatoes 4. Season with salt, stir well, cover and leave to cook on very slow heat, adding a little water from time to time if it seems necessary 5. When the vegetables are all tender, serve hot with good crusty bread
