This menu is from the lovely (and gourmet) city of Mantova in Lombardy. Italian cuisine is often city or village specific: dishes from this part of Lombardy, near the border with Emilia-Romagna, differ greatly from the cuisine of the Lombardy Lakes or Dolomite mountains. The main course is another sweet/sour dish, showing how widely spread such dishes are throughout Italy. The Rice dish is not technically a Risotto as it is not cooked the classic way. It is also known as Risot ala Pilota in the local dialect, named after the piloti who worked in the rice industry, for Lombardy too is a rice growing region.
